Ring in the new year at Rosa Sky’s “Roaring Rosé” New Year’s Eve celebration from 5:30 p.m. to 2 a.m. General admission tickets are available, or for a more elevated experience, table reservations are offered along with an exclusive prix-fixe Menu from 6 p.m. to midnight. The prix-fixe menu includes appetizers like cauliflower croquettes and Thai salt cod and pink shrimp croquettes served with a saffron tartare sauce and Champagne dressing. For the main course, savor surf and turf featuring jerk-crusted beef tenderloin, a lobster-crab cake, and a miso-sweet plantain purée, or opt for the jerk charred eggplant medallions with blood orange and charred scallion-ginger chimichurri for a vegetarian option. Finish your meal with the decadent “Chocolate Temptation Cake,” topped with blackberry-pomegranate salsa and cashew crumble for a sweet finish to your celebration.
